The pyrometer infers temperature from the radiated energy. How much a surface radiates depends on the material and the state of the surface. Bright metal radiates differently from oxidised metal, so emissivity is set on the instrument to match the workpiece.
The instrument measures over an area that grows with distance. It has to lie entirely on the region of interest, otherwise the surroundings enter the reading. Nothing may stand between instrument and measuring point, not even the inductor.
A thermocouple would have to touch the workpiece. On an inductively heated part that is impractical: the part moves through the process, and a conductive probe in the magnetic field heats up itself.
