Controllers run the heating process: they set power and time, take in readings from the sensors and hold the temperature stable across the process. Without a controller the generator runs on set power and time, with one it runs to a target temperature.

On power and time the generator delivers a set power for a set duration. That repeats as long as the same part with the same starting temperature sits in the same position. On temperature the controller takes the actual value from a pyrometer and adjusts the power.
Wherever the result cannot be checked afterwards. On a brazed joint you cannot see after cooling whether the temperature was twenty degrees off. In hardening it decides the microstructure.
